In our vertical farm, we cannot use soil as a substrate since we grow in aeroponic towers. Instead, we use agricultural rock wool, a soilless substrate made from basaltic rock derived from the lava of volcanoes. Rock wool is lightweight, chemically inert, and pH-stable, making it an excellent choice for soilless farming. Its superior water retention and ideal air-to-water ratio provide roots with access to both moisture and oxygen, promoting optimal plant growth. Rock wool typically has an alkaline pH of around 7–8 before soaking, but soaking it in water lowers it to a pH of 5.5–6.0, which is ideal for nutrient uptake and healthy seed germination.

We cultivated a variety of Asian crops in our vertical farm including leafy greens such as white & green bok choy, purple & green mizuna, kangkung, green & purple tatsoi, komatsuna, Osaka mustard greens, Tokyo bekana, choy sum, Hon tsai tai, Wasabina, Chijimisai, and red malabar spinach.

Our vegetable lineup included Asian eggplants like Japanese, Orient Express, Green Emerald, white eggplants, and Thai miniature eggplants. We also grew Asian cucumbers such as unagi, Itachi, Suyo, Sikkim, and Indian snake cucumber, along with gourds like Indian bitter gourd, traditional bitter gourd, and ridge luffa.

Among herbs, we grew green and purple shiso, cilantro, green onions, and Thai basil.
